29 Jun World Recipe: Stargazy Pie
Originally from Cornwall, this fish pie stands out for the sardine heads poking through the pastry, “gazing at the stars,” which gives the dish its name.

Ingredients:
- 6 fresh sardines (cleaned but with heads intact)
- 250 g puff pastry
- 2 hard-boiled eggs, chopped
- 2 boiled potatoes, sliced
- 1 onion, chopped
- 100 ml cream
- Salt and pepper to taste
- Butter

Preparation:
- Preheat the oven to 200°C.
- Sauté the onion in butter. Mix with the potatoes and boiled eggs, season with salt and pepper.
- Place the mixture in a pie dish and arrange the sardines with their heads sticking out.

- Partially cover with the puff pastry, leaving the heads visible.
- Bake for 25-30 minutes until the pastry is golden brown.
