World Recipe: Pilaf Rice with Nuts and Dried Fruits

Pilaf rice, also known as pilav or pilau, is a dish full of history and flavour that has travelled across the world. Its origins trace back to Central Asian and Middle Eastern kitchens, where it was made as a festive, aromatic recipe. Over time, this delight adapted in regions like India, Persia, Turkey, and even southern Europe.

Ingredients

  • 400 g basmati or long-grain rice
  • 750 ml chicken or vegetable stock
  • 60 g seedless raisins
  • 60 g fried almonds
  • (Optional) Pine nuts, cashews, chopped dried apricots, or any nuts you like
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 medium onion, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon cumin (optional)
  • 1 teaspoon turmeric or curry powder (optional)
  • (Optional) Chopped coriander, mint, or parsley for garnish

Preparation

  • First, rinse the rice under cold water several times until the water runs clear. This helps remove starch for a fluffier texture. Drain well and set aside.
  • In a large pot, heat the butter and olive oil over medium heat. Add the chopped onion and garlic and cook until soft and translucent.
  • Add the rice to the pot and sauté for a few minutes, stirring continuously. The goal is to coat each grain with the fat and lightly toast it.
  • Next, add the hot stock, raisins, fried almonds, and any other nuts you want to use. Season with salt, pepper, and if you like, a teaspoon of cumin and turmeric or curry powder for extra aroma and colour.

  • When the mixture starts to boil, reduce the heat to low, cover the pot, and let it cook for about 15 to 20 minutes, or until the rice is tender and the liquid fully absorbed.
  • Once done, turn off the heat and let the rice rest, covered, for about 5 minutes. This helps it settle and finish perfectly.
  • Before serving, you can sprinkle with chopped coriander, mint, or parsley for a fresh, fragrant touch.
