Ingredients:

For the filo pastry:

– 250g flour

– 1 teaspoon salt

– 1 tablespoon olive oil

– 150ml warm water

– Extra flour for dusting

For the semolina cream:

– 1 liter milk

– 150g semolina

– 150g sugar

– 1 teaspoon vanilla extract

– 4 eggs

– 50g melted butter

For the syrup:

– 250g sugar

– 250ml water

– 1 teaspoon lemon juice

– 1 cinnamon stick

– Peel of half a lemon

Preparation:

  1. Mix flour and salt in a large bowl. Add olive oil and warm water. Knead until you get a smooth dough. Divide into two parts and let it rest for 30 minutes.
  2. Heat the milk until warm. Add semolina and sugar, cook until it thickens. Add vanilla, beaten eggs, and melted butter. Set aside.
  3. Preheat the oven to 180°C. Roll out one part of the dough and place it in a rectangular baking dish. Pour the semolina cream and level it.
  4. Roll out the second part of the dough, place it over the cream, and fold the edges to seal the pastry. Make diagonal cuts on the surface.
  5. Bake for 45-50 minutes until golden brown.
  6. Boil sugar, water, lemon juice, cinnamon, and lemon peel for 10 minutes.
  7. Pour the hot syrup over the cooled pastry. Let it cool completely before serving.
  8. Cut into individual portions, sprinkle with cinnamon, and enjoy this exquisite Greek dessert!
