Huitlacoche, known as “Mexican caviar,” is a fungus that naturally grows on corn kernels. Though some see it as a plague, it’s considered a delicacy in Mexican cuisine.

Ingredients:
- 250 g of huitlacoche
- 2 garlic cloves, chopped
- 1/2 onion, chopped
- 2 serrano chilies, chopped
- 2 tablespoons fresh epazote, chopped
- Olive oil
- Salt to taste

Preparation:
- Heat oil and sauté the onion, garlic, and chili.
- Add the huitlacoche and cook until it releases its juices.
- Stir in the epazote and season with salt.
- Serve in tacos or quesadillas with melted cheese.
