World Recipe: Huitlacoche

Huitlacoche, known as “Mexican caviar,” is a fungus that naturally grows on corn kernels. Though some see it as a plague, it’s considered a delicacy in Mexican cuisine.

Ingredients:

  • 250 g of huitlacoche
  • 2 garlic cloves, chopped
  • 1/2 onion, chopped
  • 2 serrano chilies, chopped
  • 2 tablespoons fresh epazote, chopped
  • Olive oil
  • Salt to taste

Preparation:

  • Heat oil and sauté the onion, garlic, and chili.
  • Add the huitlacoche and cook until it releases its juices.
  • Stir in the epazote and season with salt.
  • Serve in tacos or quesadillas with melted cheese.
