Recipe of the World: Pita Bread

Pita bread is a flat and slightly fermented bread typical of Mediterranean cuisine, especially in the Near East. Its versatility and simplicity have made it a favourite both as a meal accompaniment and for filling with all kinds of ingredients.

Ingredients

  • 220 ml of water  
  • 300 g of flour  
  • 7 g of dry baker’s yeast  
  • 1 tablespoon of extra virgin olive oil  
  • 1 teaspoon of salt  
  • 1 teaspoon of sugar 

Preparation

  •  In a bowl, mix the warm water (approximately between 40°C and 45°C) with the olive oil, salt, yeast, and half of the flour. Whisk well until there are no lumps.
  • Add the rest of the flour and knead until you achieve a smooth and slightly sticky texture. If the dough is too sticky, add a little more flour.

  • Shape the dough into a ball and let it rest in a bowl covered with cling film or a clean cloth for 2 hours, until the dough has doubled in size.
  • Place the dough on a floured surface, divide it into 8 equal portions, and form small balls with each one. Flatten them into discs about 13-14 cm in diameter.

  • Place the discs on a tray lined with baking parchment and bake them at 220°C for 5-7 minutes, until they are lightly browned.
