Its fermentation process is carried out by mites and their excrement, rather than bacteria or fungi. This unique method imparts a distinctive flavor and texture to the cheese. It is placed in containers with these mites for a period of time to allow natural fermentation to occur.

Pule is a Serbian cheese made exclusively from donkey’s milk, and it costs a staggering 5,000 euros per kilogram. This high price is due to the difficulty and time required for its production: it takes at least fifteen donkeys to produce one liter of milk, and 25 liters of milk are needed to make just one kilogram of cheese. With only 150 of the specific type of donkey used in its production, this cheese is truly exclusive and rare.
