Irish Champ, originally known as Irish Champ, is a delicious traditional recipe that elevates the classic mashed potatoes by adding a touch of flavor with spring onions. This mash, incredibly creamy thanks to milk and butter, becomes the perfect side dish for meats and fish. Here is the step-by-step recipe.

Ingredients:

  • 450 g of potatoes
  • Salt
  • 4 spring onions
  • 50 g of milk

  • Ground black pepper

Instructions:

  1. Peel and chop the potatoes into uniform pieces.
  2. Boil the potatoes in salted water for about 20 minutes until tender.
  3. Finely chop the spring onions, separating the white part from the green part.
  4. Heat the milk and butter in a saucepan until the butter melts.
  5. Add the boiled potatoes and mash them with a potato masher until smooth and creamy.
  6. Incorporate the white part of the spring onions into the mash, mixing well to integrate the flavors.
  7. Add salt and ground black pepper to taste, adjusting according to personal preferences.
  8. Serve the Champ on a plate, generously sprinkling the green part of the spring onions on top for a fresh and visually appealing touch.
