World Recipe: Chausson Aux Pommes

Ingredients:

Dough

300 grams of All-Purpose Flour

150 ml of Water

1/2 unit of Lemon Juice

25 grams of Butter

10 grams of Salt

Puff Pastry:

500 grams of Butter

200 grams of All-Purpose Flour

Filling:

Apple compote to taste

Finishing:

Egg to taste

Milk to taste

Preparation:

On a countertop and with the help of two pastry scrapers, mix the flour with salt, water, lemon juice, and butter.

Combine the dough slightly without making it homogeneous.

Work the dough with your hands and let it rest in the refrigerator.

Roll out the dough. Place the puff pastry on the rolled-out dough to completely envelop it.

Roll out with a rolling pin and perform 2 double turns (fold each end of the dough towards the center and make a new fold).

Chill in the refrigerator for half an hour.

Roll out with a rolling pin. Cut the dough with a round cutter.

Stretch with your hands and place the apple mixture, brown sugar, and butter on each disc. Seal it like a turnover and brush with an egg wash.

Place on a baking sheet with parchment paper.

Make 3 cuts on each pastry.

Chill for half an hour, then bake in an oven at 200°C until caramelized. Lower the oven temperature towards the end of baking until they have risen and browned.
