World Recipe: Homemade Vegemite

An emblem of Australian culture, this iconic product was created in 1922. Vegemite is a yeast extract spread that has become a staple in Australian pantries. Developed by Fred Walker & Co., it was designed to make the most of the by-products of beer brewing and to provide a source of B vitamins.

Ingredients:

  • 1 cup of yeast extract (obtained as a by-product of beer brewing, but for a homemade version, you can use deactivated brewer’s yeast)
  •  2 tablespoons of water
  • 1 tablespoon of liquid malt or malt syrup (optional, for a deeper flavor)
  • 1 teaspoon of salt
  • 1 teaspoon of onion powder extract (optional, for an extra flavor boost)
  • 1 teaspoon of soy extract (optional, for an additional salty touch)

Preparation:

  • If you don’t have commercial yeast extract, you can use deactivated brewer’s yeast. In a bowl, mix the brewer’s yeast with 2 tablespoons of water to form a thick paste. If you’re using commercial yeast extract, skip this step.
  • In a small saucepan, place the yeast paste and add the liquid malt or malt syrup (if using), salt, onion powder extract, and soy extract. Cook over medium heat, stirring constantly to prevent the mixture from burning. Cook until the mixture thickens and takes on a paste-like texture.

  • Bring the mixture to a slow boil. Reduce the heat and simmer for about 5-10 minutes, stirring occasionally. The mixture should reduce and thicken to a consistency similar to a spread.
  • Remove the saucepan from the heat and let the mixture cool to room temperature. Once cooled, transfer the paste to a clean, airtight glass jar. Store in the refrigerator.

  • Vegemite is traditionally enjoyed spread on toast with butter or margarine. It can also be used in sandwiches, as a topping for crackers, or as an ingredient in recipes that require a salty, umami flavor.
