World Recipe: Muhammara

Discover the exquisite taste of Muhammara, a delicious traditional sauce from Syria that combines roasted peppers, walnuts, and a touch of syrup. Served with pita bread, this recipe offers an irresistible appetizer that is not only tasty but also healthy.

Ingredients:

– 300 g of roasted or fresh peppers

– 1 garlic clove

– 1 cup of walnuts

– 2 tablespoons of breadcrumbs

– 1 teaspoon of ground cumin or Syrian pepper (according to preference)

– 1/2 teaspoon of spicy paprika from La Vera

– 1/2 teaspoon of salt

– Freshly ground black pepper to taste

– 1 tablespoon of lemon juice

– 100 ml of extra virgin olive oil

Preparation:

  1. If using fresh peppers, roast and drain them well. Alternatively, you can use canned roasted peppers.
  2. In a blender, add the roasted peppers along with the strained lemon juice.
  3. Finely chop the garlic clove and add it to the blender.
  4. Lightly toast the breadcrumbs in a pan with a little olive oil.
  5. Toast the walnuts in a dry pan until fragrant and lightly golden.
  6. In the blender, place the walnuts, toasted or grated bread, ground cumin, paprika, salt, black pepper, and olive oil.
  7. Mix everything at maximum power until you get a dense and uniform cream.
  8. Adjust the texture by adding more olive oil if necessary.
  9. Serve the Muhammara on a large, flat plate, perfect for sharing.
