World Recipe: Pavlova

Pavlova is a dessert inspired by the Russian ballerina Anna Pavlova, who toured Australia and New Zealand in the 1920s. Both countries claim to be the origin of this delightful meringue-based cake, which is characterised by its crisp exterior and soft interior. 

The Pavlova recipe has evolved over time, incorporating a variety of fruits and creams, such as lemon curd, to enhance its flavour and presentation.

Ingredients

For the Pavlova:

  • Egg whites: 5
  • Icing sugar: 200 grams
  • Caster sugar: 200 grams
  • Cornflour: 1 tablespoon

For the lemon curd:

  • Eggs: 2
  • Egg yolks: 3
  • Lemon juice: 90 millilitres
  • Sugar: 150 grams
  • Quince in syrup: As needed
  • Sliced almonds: 50 grams
  • Icing sugar: As needed

Preparation

For the lemon curd:

  • In a bowl, whisk together the egg yolks, whole eggs, lemon juice, and sugar until well combined.
  • Pour the mixture into a heavy-bottomed saucepan and cook over a gentle heat, stirring constantly until it thickens and becomes a smooth custard.
  • Remove from the heat, add cubes of cold butter, and stir until fully incorporated. Strain the mixture and cool in the refrigerator.

To assemble the Pavlova:

  • Spread the lemon curd over the centre of the cold Pavlova.
  • Decorate with quince in syrup as desired.
  • Sprinkle with toasted sliced almonds and icing sugar.
