08 Jun World Recipe: Roasted Cuy
Traditional in the Peruvian Andes, cuy (guinea pig) has been a source of protein since pre-Columbian times. It’s a festive dish, highly valued during family celebrations.

Ingredients:
- 1 whole guinea pig, cleaned
- 3 garlic cloves
- 1 tablespoon cumin
- 1 tablespoon ground ají panca (Peruvian red pepper)
- Salt and pepper to taste
- Juice of 2 lemons
- Vegetable oil

Preparation:
- Season the cuy with garlic, cumin, ají panca, salt, pepper, and lemon juice. Let it marinate for at least 2 hours.
- Heat oil in a large pan or grill and fry the cuy until the skin is crispy.
- Serve with roasted potatoes, corn, and ají sauce.
