29 Dic World Recipe: Weihnachtsgans
Weihnachtsgans, or Christmas goose, is a German culinary tradition enjoyed especially during the holiday season. With its crispy skin and juicy flavor, this dish has become a symbol of family celebration in Germany and other European countries.

Ingredients:
- 10 liters of water
- 500 grams of salt
- 150 grams of sugar
- 1 cinnamon stick
- 2 tablespoons of ground black and white pepper
- 1 tablespoon of coriander
- 5 bay leaves
- 1 sprig of rosemary
- 1 sprig of thyme
- 1 sprig of wormwood
- 1 goose (4 to 5 kg)
- 3 tart apples
- 1 orange
- ½ liter of apple juice (with pulp, unsweetened)
- 100 grams of honey
- 100 grams of apricot jam or jelly
- 3 onions

Instructions:

- Prepare the brine by combining water, salt, sugar, cinnamon, pepper, and herbs in a large pot. Boil the mixture and let it cool. Submerge the goose in the brine and let it soak for 12 hours.

- Remove the goose, pat it dry, and stuff it with apples, onions, oranges, and herbs. Seal the goose’s cavity and place it in a roasting pan with some brine and apple juice.

- Roast the goose in the oven at 180°C (350°F) for 3 to 3½ hours, turning and basting it with its own juices every 30 minutes. Then, brush it with a mixture of honey and jam, and roast at 200°C (400°F) for another 10-15 minutes.
